You know exactly what I?m talking about. The veggies that you thought you?d eat. The herbs you only used for one recipe. Yeah. Those are the ones I?m talking about.

Well, we?ve been putting "The Flavor Bible" by Karen Page and Andrew Dorenburg?to the test, and just found another awesome use for it. Look up the ingredients in your fridge that are about to go bad and let the book work it?s magic. Come on, I?ll show you how?.

Braised Red Cabbage with Apples and Cipollini Onions

1/2 head (or a full head) red cabbage
1 apple, cored and sliced or chopped
1 lb. cipollini onions
2 tablespoon bacon drippings or olive oil
3 tablespoons maple syrup
3 tablespoons apple cider vinegar

Preheat oven to 375 degrees F. Put a kettle of water on to boil.

Place all the onions in a large bowl and pour the boiling water over the onions and cover for 5 minutes. This will speed up the process of removing the skins. While the onions are steaming, roughly chop the cabbage and apple. Peel off the outer skin of the cipollini onions. Place the onions, cabbage and apples in a large 9? x 13? baking dish.

In a small bowl combine the fat, maple syrup and apple cider vinegar in a bowl. Pour the maple syrup mixture over the cabbage and stir to coat.?

Lemon Thyme Roasted Chicken

3 chicken thighs and legs
1/2 a preserved lemon, pith and pulp removed and peel finely chopped (or 2 teaspoons lemon zest)
2 garlic cloves, minced
1/4 teaspoon fresh ground pepper
1/4 teaspoon salt (increase to 1/2 if using lemon zest)
1/2 teaspoon dried thyme

Mix the lemon, garlic, salt, pepper and thyme together to create a ?paste.? Cut a slit in the skin of the chicken pieces. Use your fingers to create space between the skin and the meat. Put an even layer of paste under the skin of the chicken pieces. Season the skin with salt and pepper.

Add the chicken pieces on top of the cabbage and apple mixture and bake for 40 minutes or until the juices run clear. Ours took a little longer because they were barely thawed.

MANILA, Philippines (AP) ? At least nine pit bulls rescued from a dogfighting ring in the Philippines were euthanized Tuesday and dozens more are likely to be because there are no facilities to rehabilitate them and prevent them from reappearing in underground arenas.

Roughly 300 dogs were rescued in separate raids late Friday in Laguna province south of Manlia, said Anna Cabrera of the Philippine Animal Welfare Society. Seventeen with the worst injuries were put down over the weekend, and the health of the living dogs and the progress of rehabilitating them will determine how many of them ultimately survive.

Police arrested eight South Koreans suspected of running an illegal online gambling operation in which players outside the Philippines bet on dogs fighting at a clandestine compound.

Some of the dogs rescued Friday were saved from another facility in Cavite province in December, Cabrera said. She said the dogs were "recycled" ? adopted by people who resold them to the suspects to continue fighting.

"That is a fate worse than death," she said.

Two of the suspects arrested last week had been caught in the December raid but had posted bail, police Chief Inspector Renante Galang said.

Welfare society veterinarian Wilford Almora said many of the pit bulls ? purebred and mixed breeds ? suffered ripped ears and tongues and other wounds in previous fights.

He said his group had enough drugs to euthanize 70 dogs, and had put down at least nine Tuesday afternoon with 13 more planned before they finish later in the evening.

He said they selected the most sick, emaciated and aggressive animals to put down first. Some of the dogs were too weak to stand, he said.

He said they were taking time to carefully assess each dog before finally deciding which ones to put to down.

"We are not in a hurry. We just want to make sure that the ones we put to sleep are the ones that deserve to be put to sleep based on their medical condition," he said.

Cabrera said it was not possible to care for all the pit bulls that were rescued and it would be irresponsible to give away for adoption the animals that have not properly healed.

The dogs had been kept in metal fuel drums and tied to heavy steel chains inside a 2-hectare (5-acre) coffee plantation surrounded by a fence made of corrugated tin in San Pablo city in Laguna. Police recovered 30 dogs from an arena in the nearby town of Calauan where they were about to fight, Almora said.

The eight suspects face charges of illegal gambling and cruelty to animals.

The San Pablo city prosecutor has not yet completed a preliminary investigation to determine if evidence is strong enough for a court case. In the meantime, Galang said police will turn them over to immigration officials.

If convicted of illegal gambling, they face a maximum of 12 years in prison. The charge of animal cruelty carries a penalty of up to two years, but no one has served time in the Philippines for the crime. A student recently found guilty of killing a cat received a few months of community service.

Dogfighting is not common in the Philippines, and the fights were broadcast mostly outside the country.

Ryan Apologizes for Intimating That Military Brass Lied to Congress

Paul Ryan performed a phalange-ectomy today on CNN?s State of the Union today, cleaning up comments he made about military leaders lying to Congress about their true opinions on the defense budget. Here?s how he answered Candy Crowley?s question about the exchange:

RYAN: I really misspoke, to be candid with you, Candy. I didn?t mean to make that kind of impression. So, I was clumsy in describing the point I was trying to make. The point I was trying to make ? and General Dempsey and I spoke after that. I wanted to give that point to him, which is that?s not what I was attempting to say.

So in our political system, you can call for the mass firings of federal employees, you can abolish Medicare as we know it and block-grant Medicaid so it will become inaccessible to poor people, you can basically assault anyone and anything in the pursuit of ideological purity. But if you criticize a military leader, you have to go on television and humbly apologize. That?s just how it works.

The larger issue here concerns the military budget and the looming showdown coming in the next several months. Ryan wants to cut the overall budget below the agreed-upon targets from last year?s Budget Control Act, which gave us the debt limit increase. But he wants to increase defense spending above the President?s budget targets. Ryan?s budget, passed by the House last week, also set up a reconciliation process to cover sequestration cuts which will be triggered at the end of the year, replaced by cuts to the federal workforce.

All of these issues will be contentious and could risk a government shutdown at the height of election season, when this year?s budget runs out at the end of September.

Meanwhile, with all the focus on spending on public employees as the main replacement for defense cuts in the Ryan budget, you wouldn?t know that, at the same time, the Senate has taken a look at runaway contractor spending, one of the true growth areas in the federal budget:

?Spending on service contractors has outpaced spending on federal employees,? said Sen. Claire McCaskill (D-Mo.) as she opened a hearing Thursday of the ad hoc subcommittee on contracting. ?The cost of service contracts has increased by 44 percent over the last 10 years, from $181 billion to $324 billion, while in the same time period, spending on federal employees has increased by 34 percent, from $170 billion to $229 billion.?

McCaskill praised bipartisan legislation offered by Sens. Barbara Boxer (D-Calif.) and Charles E. Grassley (R-Iowa) that would cap the amount the federal government reimburses individual contract employees at $400,000. A bill by Rep. Paul Tonko (D-N.Y.) would limit such reimbursement to $200,000. Currently, Uncle Sam is allowed to pay $693,000 to individual contractors, who might be paid additional sums by their companies.

Service contractors do a wide range of government work, often in the same space as federal staffers, but without the same restrictions on pay.
